Château Coutet (not to be confused with the Coutet in Barsac) is located in the heart of Saint-Emilion, about half a kilometer away from the village. It has belonged to the David-Beaulieu family since 1601 (14 generations). However, the presence of old ruins, wild tulips and Eastern Gladiolus found in the vineyard suggest that the property has been making wines since the Roman times. The vineyard is next to some of the most prestigious properties, including Château Angelus (1er Grand Cru Classé “A”), Château Canon , Beauséjour-Ducot or even Beauséjour-Dufau-Lagarosse (all 1er Grand Cru Classé “B”). In fact, Coutet used to be a Grand Cru Classé in 1955. One of specificities of Coutet is that it has been practicing organic viticulture as long as they’ve been making wine. Although the estate has only been certified organic since 2013, it is one of the very few vineyards in France that can claim to always carry organic practices (there’s only 58 of them today). The property is 16 hectares in size (40 acres) of which 12 hectares is planted with vines and the remaining 4 hectares is covered in parks and woods where a unique biodiversity lives, rare species of flowers, orchids, and the myriad of insects and birds that come with it. The vineyard has no traces of pesticides, chemical fertilizers or herbicides and is thus naturally organic. Minimum intervention in the vineyard and cellar. Average age of the vines is 38 years old, but some of the oldest vines are a century old. Horses are used to plow some of the oldest plots in the vineyards. All grapes are hand harvested. Use of indigenous yeast found naturally in the vineyard. After the natural alcoholic fermentation, the wine is aged in 20% new French oak barrels. Estate grown and bottled. This Aussy 1er cru vineyard site sits just below En Champans on the slope; half was planted in 1948, and the other half in 1998 so boasts beautiful concentration from these old vines. With its pretty spice element, elegant floral notes, and taut red fruits, this cuvée offers a supple, silken texture and subdued tannins—a quintessential Volnay, and the most open and approachable of François’s premier crus. On top of that – 2018 many have been overlooked for being a riper vintage, but it means this wine is absolutely singing now and does not require decanting or cellar time.

“Along with its neighbors Puligny-Montrachet and Meursault, Chassagne-Montrachet is viewed today as one of white Burgundy’s “big three”—a world-famous village synonymous with layered, mineral-driven, age-worthy Chardonnay. However, a peek into even the relatively recent past reveals that Chassagne-Montrachet was more renowned for red wine for most of its viticultural history. According to our friend Sylvain Morey, Chassagne-Montrachet was planted two-thirds to Pinot Noir and one-third to Chardonnay up through the late 1970s, when a shift began to occur; by the mid-1990s, plantings were roughly equivalent; and today, Chardonnay outnumbers Pinot Noir 75% to 25% and gains ground with each passing year. Winemaker Notes Chassagne’s unabashed soil-driven nature shines through clearly but elegantly in this wine; one would have to spend much more in the Côte de Nuits to find something even approaching it.

Blackberries, smoked plums, graphite, ground pepper, and crushed rock-like minerality all emerge from this beautifully balanced, elegant, yet concentrated and fleshy red that has the class, as well as the structure, to keep for over a decade. Day is the Zinfandel project of Ehren Jordan, the winemaker behind such amazing labels as Turley, Neyers, and Failla. When he purchased a St. Helena property back in 2004, he knew he wanted to plant grapes on the hillside. After a few years of pondering, he decided that the locale was ideal for one of his early loves in the vine world - Zinfandel. Ehren established his reputation as a talented vigneron during his tenure at Turley and Day is a return to those roots. Named for the old grist mill that was found on the property, Grist sits pretty at 1000 ft. elevation on Bradford Mountain in the Dry Creek Valley AVA. The site was originally planted 100 years ago, and has since been replanted in the early 1970s. Farming here is Organic. The iron rich, red volcanic Boomer Loam soil results in low yields and concentrated wines.

Orphan Barrel Muckety-Muck 24-Year Old Single Grain Scotch Whiskey

Orphan Barrel’s 2020 release is Muckety-Muck, a 24-year-old single grain Scotch whisky from the shuttered Port Dundas distillery. It’s the second release whose origins come a closed Scottish distillery. Last year saw Forager’s Keep, a 26-year-old single malt from Pittyvaich. For years, the series almost exclusively featured old Kentucky bourbon. I’m glad to see the brand, owned by Diageo, explore its expansive library of aging whiskies in Scotland.
Single grain means the whisky comes from one distillery and was distilled from a cereal grain. Whereas malt whiskies are distilled using pot stills, grain whiskies are typically distilled using column stills. Established in 1810, Port Dundas was at one time the largest distillery in Scotland. Production stopped and the distillery was demolished in 2011.
Older single grain whiskies can be dreamy, and this bottling is no exception. Soft top notes of vanilla and butterscotch mingle with ripe orchard fruits on the nose. The palate mostly follows suit, sprinkling in some baking spices and lemon rind. The whisky reveals a touch of rancio on the back palate, a sign of its age. The medium length finish is warming with lingering semi-sweet notes.

Fuji Single Grain Whisky

Situated at the base of Mt. Fuji, only 7.5 miles from its peak, the Fuji Distillery (https://fujiwhisky.com/) has been making whisky in the shadow of Japan’s most famous mountain since 1973. Despite that, their first US release came only in 2021.
This is extremely limited. In point of fact, Hillside Tavern was allocated only 1 bottle!
This release of Fuji Single Grain Japanese Whiskey is a blend of Fuji’s three in-house grain whiskies and is bottled at 46% ABV. It was created to highlight both the similarities and differences of different grain whiskies from around the world, with a Japanese flair.
The fruity notes are present with apple and pear coming out again, vanilla and some grain notes in the back. It tastes less ‘bourbon-y’ then the nose suggests, yet can still be described as a lighter feeling and tasting style of bourbon. The finish is nice and long, morphing to orange and chocolate. With water, the aroma is more pleasing as the water pushes the grain notes back and pulls the fruity notes forward.
If you’re a bourbon drinker looking to try something new, this may be what you’re looking for. It just might win you over with its complex yet lighter bourbon-like qualities.

From the Whiskey Advocate: For this seventh chapter of the Little Book series, eighth-generation Jim Beam master distiller Freddie Noe blended the liquids of the previous six chapters with a new one. It’s quite a combination—a mix of straight bourbons aged 18, 17, 9, and 4 years, along with 10 year old and 4 year old ryes, and 5 year old straight malt that was finished in applewood-smoked barrels. The result is a rich array of flavors— chocolate cake, baked apples, and cinnamon—with plenty of heat, spice, and a long finish. The result is a truly unique Irish Whiskey with savoury marmalade flavour and warming hints of tobacco. Only a limited number of bottles of this whiskey have been produced.
